Mooncake!

Every year, I spent over $100 to buy mooncakes for my family. This year, instead of buying from the hotels, I made my own mooncakes! Cool right? ^_^




Proudly present ~ my self-made mooncakes! I know it's not that obvious, but if you look closely, the mooncakes were imprinted with Hello Kitty & Doraemon (besides the obvious flower & sea shell ones).

The ingredients are just fried glutinous rice flour (kao fen), icing sugar, shortening and lotus paste. I've used truffles (e.g champagn, vodka peach, green tea, mango, lychee) instead of salted egg yolk as the center. All & all, the cost price of making 1 mooncake is approximately $2 (1 truffle alone cost $1.30), which is so much cheaper than buying from hotels. 

Recipe for snow skin mooncake ( 30 small pc):
Fried glutinous rice flour (kao fen) - 150gm
Icing sugar - 180gm
Shortening - 66gm
Cold water - 150gm
Lotus paste - 800gm
Truffles - 30pcs
Colouring - optional

Directions:
1) Sieve the rice flour & icing sugar into a mixing bowl
2) Add shortening and rub the shortening into the flour mixture till a crumb-like texture
3) Add water ( add colouring into the water for coloured snow skin) into the mixture and mix well until a smooth dough
4) Set dough aside for at least 20 mins, covered with cling firm
5) Meanwhile, roll the lotus paste into ball shape of 22g and press the truffle into the center. Together, the filling will weigh 32g
6) When the dough is ready, divide dough into small portions of 22g
7) Flatten the dough into a disc and use it to wrap up the filling
8) Press the dough ball into the moon cake mould

And then, you got yourself a self-made mooncake! Easy right?

Variations to consider:
1) Lotus paste with melon seeds
2) Replace the truffle with salted egg yolk
3) Replace the truffle with flavoured lotus paste (e.g. coffee)
